... which, of course, the exact width of a new door.* After I figure out a 7-foot straight edge, how much should I cut off? Is 1/4 inch enough?

*Glad I checked this before I made hinge mortises!

I realize this is from a while ago, but I just came across it while researching door trimming. That 3/16 inch trim on the hinge side worked for you—did you check the gap on the latch side afterward? I’m about to do a similar job and wondering if the pre-drilled lockset alignment stayed perfect.

I trimmed hinge sides on several doors and got great results using a sharp planer. For smooth, even cuts, I rely on dewalt planer blades to keep everything precise without tear-out. They’re a solid investment if you do this often.
